You know how you just love those meals where you toss everything into one pan and slide it into the oven? Here’s another to add to your list of easy favorites that also makes the house smell like someone special is coming to dinner. They are and it’s you! My very fall-ish one-pan chickenbraise is simple to grasp, fun to make, and will fill you up happily this very week. (Sorry I’m a little late to the Oktoberfest party… but it couldn’t be helped.) Chicken and apples, much like pork and apples, are a lip-smacking and quintessential autumn pairing. If you like this dish, it can go into your regular dinner rotation and — hey — you’ve got something different to eat! Leftovers are luscious for small households and the recipe can be decreased or increased. We don’t always associate soup with summer, but in the same way fresh, sweet-scented peach pie demands to be baked in the dog days of August, we have to stir up zucchini soup at the exact moment the counter begins piling up once again with unending stacks of zucchini (tomatoes, cabbage…). Or when a very inexpensive, but large bag of zucchini somehow gets into our cart at Costco. And we get home only to wonder just what to do with all of that squash.
This week marks the beginning of weekend picnics, warm holiday get togethers, nights in the backyard, weeks at the beach, days at the cabin, and all kinds of thrilling grilling on your balcony or patio! I spent a good deal of my life working for cash and life fulfillmentas 1. a librarian and 2. a church music director. (I taught piano, too, on the side.) Home gardening in the Front Range of the Rocky Mountains is occasionally ajoy, but more often a frustration. While gardening is surely those things everywhere, with about 16 inches of precipitation per year in our area (let’s compare it to Williamsburg, Virginia with 48 inches), it’s not only hard to grow anything, it’s sometimes impossible. Very little grows without irrigation and by the time you add sprinkler systems and pay for water, it’s surely easier and certainly less expensive to simply buy what you need. Continue reading →
This week marks Colorado’s 140th birthday…and the Olathe Sweet Corn Festival! In honor of those happy occasions, a soup based on our famous Olathe (pronounced o-LAY-tha) sweet corn seemed right for dinner. I admit it’s difficult or a bit embarrassing, maybe, to put up a grill recipe. It was -12 in St. Paul, Minnesota today. But it’s 60 here and while winter is only a day or two away from returning, I’ve been taking advantage of our brief spring respite for the past couple of days.

If I drive around the grocery store parking lot, there are still piles of gritty-gray and black snow several feet high. I know it’s nothing like up north, but winter hasn’t disappeared totally and I know it’ll be back to bite us on the butt again.
