When I was a younger woman, I had no time for breakfast. Of course I choked down all the coffee I could manage and then, on high throttle, ran to catch the bus for work or jumped in the car to run kids to school. By lunch I was Starved with a capital “S” and surely ate more than I needed. I particularly remember drinking chocolate milk with my noon meal every day for one year of my short teaching career. (I also had to buy new and larger pants that year. It only takes one constant change, you see.) It wasn’t that I hadn’t been raised to eat a good morning meal; I had. Thanks, Dad. Somehow that daily oatmeal had gotten lost in the shuffle along the way, perhaps at college, much to my detriment. One fateful fall, however, weight having finally gotten the best of me, I joined Weight Watchers (WW). The doctor also called me on my caffeine habit; sigh. (I drink half-caff now so I can still have a humongous mugful.) If you know anything about WW and particularly old school WW –before points–you’ll know you must eat breakfast. You’ll fall flat on your face if you don’t. While I’m still a faithful member of the WW tribe (I’d be even larger if I weren’t), I also have become even more attached to the idea of a filling, substantial breakfast so I don’t lean into snacking or want two lunches. Plus I simply love breakfast!

Aside: Why have I done WW for so long? It keeps me honest. Can’t forget that ice cream bar if you’re tracking everything you eat.

FRIDAY FISH: Fish Fajitas and Black Beans

I think even Lent could be a little fun, couldn’t it?

You know how when you eat with that same someone in various restaurants over the years, you can nearly look at the menu and figure out what they’ll order? “I knew you’d get that.” Hm. Right again. Such smugness. It’s not totally always, but my husband will regularly choose the fish tacos should they have, like magic (not), appeared on the list. And if he has a choice of beans (pintos or black), he’ll choose black even though at home he swears by my pinto beans. So if I’m one smart cookie, I’ll keep nearly-always-the-choice fish tacos on permanent rotation at our house. And I do. But they need a little tweaking or updating from year to year, especially during FRIDAY FISH weeks. This time, not only did they morph into “Fish Fajitas,” but they’re made in the air fryer. Because I could. But could you bake them in the oven? (See recipe) Of course. Might you fry them in oil? Sure. But I hope you’ll choose the air fryer method. It’s fast; it’s healthy; it’s fun.

Father’s Day: Dave’s Easy Huevos Rancheros with our CHEEP A** BLOODY MARYS.

When my husband Dave and I became empty nesters several years ago, we began to eat brunch out on Sundays after church and rarely cooked it at home except on holidays or special occasions. Then came COVID-19. No church except online. No restaurants open until recently. (We’re still not going, though we did go to our local dive drive-in for ice cream the other day.) We immediately hopped to and began cooking brunch at home again–just like in the old days. We shared the work–Dave making eggs, etc. and me happily baking a goodie like the Blueberry Buckle below, which I hadn’t been doing in eons. We’ve taken turns on what we now call our Cheep A** Bloody Marys (more on that later) and now eat brunch BEFORE church for the most part. We’ve even gone way old school and made Dave’s mom Lorna’s comforting egg casserole a time or two as it provides excellent lunch leftovers. (Recipe in photo below.) Could we ever have imagined all this? No. You probably hadn’t either.
