When I was a younger woman, I had no time for breakfast. Of course I choked down all the coffee I could manage and then, on high throttle, ran to catch the bus for work or jumped in the car to run kids to school. By lunch I was Starved with a capital “S” and surely ate more than I needed. I particularly remember drinking chocolate milk with my noon meal every day for one year of my short teaching career. (I also had to buy new and larger pants that year. It only takes one constant change, you see.) It wasn’t that I hadn’t been raised to eat a good morning meal; I had. Thanks, Dad. Somehow that daily oatmeal had gotten lost in the shuffle along the way, perhaps at college, much to my detriment. One fateful fall, however, weight having finally gotten the best of me, I joined Weight Watchers (WW). The doctor also called me on my caffeine habit; sigh. (I drink half-caff now so I can still have a humongous mugful.) If you know anything about WW and particularly old school WW –before points–you’ll know you must eat breakfast. You’ll fall flat on your face if you don’t. While I’m still a faithful member of the WW tribe (I’d be even larger if I weren’t), I also have become even more attached to the idea of a filling, substantial breakfast so I don’t lean into snacking or want two lunches. Plus I simply love breakfast!

Aside: Why have I done WW for so long? It keeps me honest. Can’t forget that ice cream bar if you’re tracking everything you eat.

A few weeks back, while doing my monthly Trader Joe’s run, I scored a package of fresh chicken Italian sausage. Upon returning home, I stuck it in the garage freezer and promptly forgot all about it. Ok; it’s my MO. Finding myself with most of a pot of polenta leftover from Friday night’s bœuf bourguignon dinner and wondering what to do with it (there are myriad uses–no worries), I remembered that sausage and easily pictured it with a simple tomato sauce along with a cascade of sautéed mushrooms. A little garlic, of course–but not a lot. How about some fresh asparagus, I thought? It is asparagus season, after all. (Here in Colorado Springs –and I know this because of a longtime faithful reader, thanks–, we have wild asparagus that should just about be coming on. Take a peek around.) While it did dirty a few pans (hello wonderful DACOR dishwasher– ours was made by Asko, the Swedish company–and is still running perfectly without mishap after 9 years/knock on wood), within 45 minutes we had an easy-scrumptious dinner on hand with which to watch a couple of episodes of Netflix’ addictive new series “Transatlantic.”

A few days ago, a lovely Donna recipe, Super Green Stir Fry, flew across my fb feed. My eye was caught; my mouth nearly watered. It was SO green. It did have rice noodles, though….but no meat! Probably Meatless Monday, hm? I was going to make it. Just like that. Except I’d been dreaming about a fish stir fry for Friday Fish. But I hadn’t yet figured it out. Dave, the best sous husband said, “Don’t you mean shrimp??” “Nope,” I said. “I mean fish.” Why couldn’t a famous woman like Donna help a home cook out?

Asparagus-Potato Salad

So many memorable old phrases I enjoy using, fine writer that I am. One is, “No good deed goes unpunished.” Another might be, “Birds of a feather flock together.” Which must, of course, be followed by, “Opposites attract.” Following those for no reason at all is, “Great minds think alike.” Which is what I say when I make a dish off the top of my head and begin to write the recipe before realizing I cooked the same (or nearly the same) thing 10 (5 or 15) years ago. Thank goodness “Love is Lovelier the Second Time Around,” (a favorite wedding song of mine) and I absolutely don’t mind “reinventing the wheel.” Roll your eyes now or forever hold your peace. Ok, I’m done. But I really did make almost this very same salad in 2014, though its current appearance is quite distinct from the first and today’s recipe title is “Asparagus-Potato Salad” rather than, “Roasted Potato-Asparagus Salad with Mushrooms and Sweet Onions.” Same difference. Just about.

Cornish Hens with Cranberry Cornbread-Brown Rice Dressing: Thanksgiving for One or Two

I always forget about Cornish hens and then when I make them, I can’t believe I let so much time go by without putting these festive little birds on the menu. They’re quick, inexpensive, and versatile — especially when you’re cooking for one or two for Thanksgiving. If you don’t want to go to the trouble of a bunch of side dishes, you can even cook your potatoes and vegetables such as carrots, onions, halved Brussels sprouts, chunks of zucchini, or diced butternut squash right in the pan with them. I include directions for the easy carrots and spinach from the photo in the printable recipe. And even cooler is the simple pan sauce stirred up in the roasting pan while the hens rest and you pour the wine. No Good Gravy! worries. While a one-pan Thanksgiving always sounds nigh unto impossible, you can actually do it if that’s your druthers. That’s an easy clean up, too. On your own this year? I’d still advise cooking two Cornish hens … you want leftovers, right? I mean, the best part of Thanksgiving is the I-don’t-have-to-cook next day sandwich with mayo on white bread. Right after the pumpkin pie for breakfast, that is. Don’t skip the whipped cream.

If you live in Colorado, you know from peaches, which are grown way out west on the western slope–almost in Utah if you check the map. Every year about this time, your friends in other states begin to mention, “Hey, I bought Colorado peaches in the store the other day!” You look in your store and you find California peaches and begin to think we’re exporting all our best produce. It happens. (I’ll give you that there are also great peaches from Georgia, Washington state, Michigan, and even California. I just live in Colorado.)
