Salami Chopped Salad

What’s life without bacon? A dog and a beer at the ball park? Brats on the 4th of July? Just a ham sandwich for supper, for goodness’ sake? Luckily I have this guy in my life who smokes meat like he was born to it, so we can skip A Lot from the store and leave the nitrates right where they sit. But once in a while…you have to let up. Go for the gold. Grab the salami, as it were. Scratch that. Insert eye roll. And so we, every once in a while, splurge on something like salami and cheese with crackers and a cold beer or a “Chopped Salami Salad” along with a glass of rosé. No stove. No grill. Thank you very much. In the summer, I’m fond of what I label, “Shop and Chop” meals. It’s a hot day. You go to the store, buy what looks good, come home and — with no or nearly no cooking — make big with your chef’s knife and create “dinner” out of whole cloth. This is one of them.

FRIDAY FISH: Caprese Salmon Burgers

Come summer and time to cook outside, I stock our freezer with easily and quickly grilled proteins like chicken thighs and legs, bone-in pork chops, and sirloin steak for kebobs. Then all I have to do is talk my husband into firing up the grill, make a salad, and we’re soon ready eat. And while I’m happiest with all kinds of freshly made burgers if it’s a burger night, it’s also nice to have some pre-made frozen ones for those times when desperation is the mother of invention. A resealable bag of salmon burgers is usually at the top of my warm weather grocery list. I even keep whole-wheat skinny buns frozen, too, as they last a few weeks if well-wrapped and thaw in no time at all. What’s cool is you are SUPPOSED to cook these particular salmon burgers frozen–no thawing needed, no thawing allowed. Yes!

Salmon Salad with Broccolini, Kale, and Avocado Mayonnaise

Last Friday, I taught a class called, DESIGN YOUR OWN WHOLE MEAL SALAD, at First Congregational Church of Colorado Springs.  This active church sponsors an excellent Health Ministry with lots of great wellness-promoting features including cooking classes that run from March – October. (If you’d like a copy of the booklet from the class, leave  a note in the comments or email me/message me on fb.)

The class consisted of a couple of favorite salads, Salmon Caprese with Asparagus… (shown below in a bit neater variation than my very quick to fix and eat photo above… along with lots of tips, talk, and helps about making salads a weekly mainstay in your house)…

and Israeli Couscous Salad, right below here in all its attendant glory. I do love this salad!  Both of them, if the truth be known.  I’d like to have nickel for every time I’ve made either one, but especially the couscous. Continue reading
