If you asked me what my favorite dessert was, those who know me are sure I would not say, “apple pie.” When a friend bakes one, naturally I’ll have a small piece. Without regret. But it’s pretty darned weird there are two apple pies on the blog within a month. I’m not a betting woman, but if I were, I sure as heck would have betted against that happening.
You know how you just love those meals where you toss everything into one pan and slide it into the oven? Here’s another to add to your list of easy favorites that also makes the house smell like someone special is coming to dinner. They are and it’s you! My very fall-ish one-pan chickenbraise is simple to grasp, fun to make, and will fill you up happily this very week. (Sorry I’m a little late to the Oktoberfest party… but it couldn’t be helped.) Chicken and apples, much like pork and apples, are a lip-smacking and quintessential autumn pairing. If you like this dish, it can go into your regular dinner rotation and — hey — you’ve got something different to eat! Leftovers are luscious for small households and the recipe can be decreased or increased. Crud. I’ve had the crud. Dave, too. Days and days of nasty, head cold life–luckily not much else like sore throats or tummy troubles. Unable to navigate further than the kitchen, we summoned up pots of my easiest chicken soups, ordered pizza when the soup was gone, and watched as many Christmas movies as two people could handle in what ended up to be more than a week. In between, there was a snow storm that left us with several inches in the drive and on the walkways but with luckily no power outages. That meant a few gorgeous fires in the fireplace to cheer us up.
Pancakes are the answer when the question is, “What’s for dinner? I haven’t been to the store and there’s nothing thawed. It’s late and we’re hungry.” My happy guess is you have flour, eggs, milk, and syrup or honey. Maybe, if God is good, you have some bacon in the freezer. Enter the fall breakfast for dinner and why not? It’s not something you do often, but when you do, you think, “THIS is a great idea!” Ok, this might not have fit in the “diet,” but I didn’t overdo.Continue reading →
